Suggestions in the Sultana restaurants reflect the seasons. In their laboratory-kitchens, at lunchtime and in the evening, the spirit of nature provides the foundation for compiling the menus. Harmonious nature, with produce conjuring up market-fresh tastes, specially selected from our vegetable gardens in Oualidia and Marrakech, and responsible fishing on the lagoon of Oualidia.
Delving into age-old memories of the Moroccan terroir, the Executive Chef and his kitchen brigade enthusiastically subscribe to cuisine based on instinct. A keen eye for detail, well-orchestrated gestures and harmonious presentation simultaneously pay homage to the culture of French-style dining and the Moroccan sense of hospitality.
La Sultana’s wine cellar holds over 3,000 carefully selected bottles.
It celebrates the vineyards of Morocco and France, while also featuring a few remarkable discoveries from beyond.
Among its highlights is the exclusive “Méharée – Réserve La Sultana” cuvée, created in collaboration with Domaine des 3 Cavaliers — a wine that perfectly captures the spirit of the House.
With nearly 250 labels, the cellar reflects a genuine passion for wine, offering refined pairings to enhance our cuisine under the expert guidance of our sommeliers.

As part of La Sultana’s philosophy of “Terroir Cuisine”, we showcase the best ingredients Morocco produces with “100% Botanical” options and local & ethically-sourced meat & fish. Our cuisine is inspired by our network of small local producers who guide us through their harvest seasons and incorporates wholesome & fresh vegetables purchased locally or handpicked from La Sultana Oualidia’s own organic garden. Additionally, we share the taste of heritage Moroccan products like the saffron from Taliouine, some salt from Zerradoune, cumin from Alnif, and argan oil from Souss.

Located on the Bahia rooftop, La Table du Souk offers a great view of the historical monuments and Moulay El Yazid Mosque with traditional green-tiles & zellige design. For lunch, La Sultana offers two cuisine types both focusing on freshness and simplicity.
On the “From the Market” menu, we share the taste of heritage Moroccan products like the saffron from Taliouine, salt from Zerradoune, cumin from Alnif and argan oil from Souss in the market menu.
